Welcome to another week of healthy-ish meals! This week I’m sharing with you my take on broccoli salad. I had never really had true broccoli salad before, but when I tried this version, I was hooked . It was crunchy, citrusy, savory, and a little fruity –basically all of the flavors that taste like summer. So my version doesn’t have mayonnaise, but instead, I use a vinaigrette dressing. I found a similar recipe one night when we were making chili dogs (I know, not even a little healthy, but you have to treat yourself sometimes, right?), and I was trying to find a healthier side dish to kind of balance out the meal. I typically do that if my main dish is more indulgent. While the broccoli salad didn’t exactly cancel out the two chili dogs I ate that night, it certainly was a nice and light addition. I tweaked a recipe I had found online based on what I had on hand, subbing red onion for thinly sliced carrots, and cashews for slivered almonds, but of course, if you prefer the latter in your broccoli salad, feel free to add them in. I’m sure bacon bits would be a tasty addition. This recipe is bound to be a summer favorite –perfect for any barbeque or potluck!

INGREDIENTS
For the salad…
4 cups broccoli florets
2 cups carrots
½ cup dried cranberries (or any dried berry)
½ cup slivered almonds (sub pecans, walnuts, or favorite nut)
For the vinaigrette…
¼ cup honey
½ cup olive oil
½ tsp lemon juice
2 cloves minced garlic
Salt and pepper to taste
DIRECTIONS
- Chop the broccoli into various sized florets.
- Thinly slice your carrots as you please. I used baby carrots, as that’s what I had on hand, and sliced them vertically into sticks.
- Add your florets, carrots, dried cranberries and slivered almonds to a large bowl.
- Assemble your vinaigrette. Add the honey, olive oil, lemon juice, garlic, salt and pepper to a small bowl and whisk until well combined.
- Pour your vinaigrette over your ingredients and mix until everything is evenly coated.
- Enjoy!
