Kids for a cause! - Daniel Island News

teke.indah.link

Eight-year-old Eliza Broad is in a bit of a pickle. And that’s a good thing!

The Daniel Island youngster’s new business – Pickles 4 Life – is going so well that it’s been a bit difficult to keep up with her surging orders. But the homeschooled student is handling it all like a seasoned pro.

Last week, her kitchen counters were covered with the tools of her trade – a slicer, pounds of pickling cucumbers from farms around Charleston, fresh dill and garlic, vinegar, salt, water, and waiting containers.

“You take a cucumber and put it in this little thing,” she said, pointing to the slicer. “Then you start cutting! You can choose how thick or skinny you want it. I just do that for a while!”

It all started with the COVID-19 lockdown last spring. Eliza was looking for some fun activities to do during quarantine. She and her mom did some baking together and eventually tried pickles, a family favorite.

“First we started making different recipes,” explained Eliza. “We made donuts, bagels, my brother helped, too.  And then we tried a pickle recipe and we thought it tasted really good. And I just came up with the idea of making a pickle business!”

They gave out some samples to friends and family and then the rave reviews started pouring in.

“Now we get lots of customers,” said Eliza proudly.

So far, she’s sold more than 127 containers and processes about 20 to 30 pounds of cucumbers per week. It takes a couple of days for each batch to be completed. Once done, she and her mom, Sarah Broad, deliver them to their customers’ homes. Each new order includes a handwritten note from Eliza. They also feature a snappy Pickles 4 Life logo that Eliza helped create.

“Daniel Island keeps her pretty busy,” said Sarah. “She started out with about 15 customers and they kept asking for more!”

Sarah posted about Eliza’s offerings on the Daniel Island Moms page and things skyrocketed from there.

“She got 53 orders!” added Sarah. “It’s been amazing. She caught up with those in a two-week period…probably two-thirds are repeat customers.”

Another key element of Eliza’s business is giving back. In October, she launched a charitable component to Pickles 4 Life, donating a portion of her proceeds to the Ronald McDonald House. This month, she is raising money for pediatric cancer awareness in recognition of a family friend who is fighting lymphoma, and in December she hopes to donate to Toys for Tots.

“It feels really good,” said Eliza, of her philanthropic efforts. “Because I know we are giving lots of money to them.”

Get the latest on Eliza’s business by following her Facebook page “Pickles 4 Life.”

BAKING BUDDIES

Daniel Island kids Ava Delpino and her good friend, Lane Grizzle, are also using their time and talents to help others. Following in Alice’s footsteps, the pair recently hosted a bake sale in Smythe Park to raise money for the same family coping with breast cancer.

They made a variety of baked goods and other homemade treats, including cupcakes, brownies, chocolate-covered rice crispy treats, pretzels, and vanilla wafers.

“It felt very good,” said Ava, a sixth grader at Daniel Island School. “I love helping people in any way that I can, and with everything going on, it was the least we could do to help.”

The girls’ efforts brought in $425 for the family.

“Thank you to everyone in the community for helping us raise money to support such an important cause,” added Ava.

UNMASKED GOODNESS

Daniel Island resident Alice Beavan is feeling similar good vibes about the business she created during the COVID-19 pandemic. An arts and crafts lover, the 11-year-old makes tie-dyed face masks in a variety of colors and styles for customers of all ages. The idea blossomed over the summer, when she noticed her mom, Lisa Beavan, making bags with quarantine supplies and masks in them. Alice had some tie-dye on hand and decided to try it on a few of the masks. Soon, her dad, Greg Beavan, started wearing them at his job at the Daniel Island Club.

“They wanted some, so that’s how it started!” said Alice. “Then I started getting lots of orders.”

She uses all different tie-dying methods, noted Lisa, sometimes using rubber bands and even forks to create unique designs. It takes her about two days to complete the entire process.

“I like doing the tie-dying,” added Alice. “And I like the different techniques.”

So far, she’s made close to 1,000 masks, and the orders keep coming.

“I don’t think any of us anticipated that it was gonna turn out like this,” said Lisa. “By any means. I think it was something fun to keep her busy during COVID and then all of a sudden the next thing you know it’s taking off! The first week, I think she did 220 masks.”

And, like Eliza Broad, Alice’s new business venture is allowing her to focus on helping others in need. She has donated masks to fire departments on both Daniel Island and in her former community of Boston, to pharmacists at Delta Pharmacy, to the Delancey Street House in downtown Charleston, and to teachers at Daniel Island School.

“I know that a lot of places are going through hard times and I wanted to give back,” she said.

On Oct. 24, she participated in a boot camp fundraiser for a local Daniel Island mom who is battling breast cancer. As dozens gathered to take part in the fitness event, Alice set up a booth to sell white masks tie-dyed in hot pink.

“Alice, you should be so proud of yourself,” said island resident Terry Haas, who stopped in at Alice’s table. “You are crushing it!”

Through her efforts that day, Alice was able to donate $543 to benefit the mom and her family.

“This is so good for her,” added Lisa. “Because she’s learning about business, helping and giving back. It’s awesome.”

KINDNESS COUNTS

The Daniel Island News is starting a new, regular feature for the paper focused on kids’ acts of kindness. We want to know about these kind deeds — large or small — that kids on Daniel Island and the Cainhoy peninsula are sharing with their neighbors. From entrepreneurial ventures that give back like the stories you are reading here or simple acts like helping a neighbor with yard work or donating their birthday money to a good cause. Do you know of a local kid who is spreading kindness using his or her time and talents? Let us know by filling out the survey at surveymonkey.com/r/KidsKindness and sharing their story. If you have questions, email Daniel Island News Editor Boots Gifford at boots@thedanielislandnews.com.

Too many cucumbers - Richmond County Daily Journal

Too Many Cucumbers

This past summer, Hamlet resident Sommer Martin found that she had more cucumbers in her garden than she knew what to do with. After giving away as many as she could to family and friends, she still had more left. Hating to waste food, she investigated selling her extra produce at the Rockingham Farmers’ Market. She first talked with Josh Blake, the Farmers’ Market manager and a farmer himself. Josh directed her to call the Extension office to have an agent check out her garden. The Extension visit was to verify that she was indeed growing the produce she was planning to sell, and not just buying produce elsewhere and re-selling it. The extension agent did not judge the garden in any way. The visit also serves to start an ongoing relationship between the grower and the agent.

After the Extension visit, Sommer joined the Rockingham Farmers’ Market Association, paid the annual fee of $25, and read up on the regulations for selling at the markets. She started selling her excess produce, along with some handcrafts that she makes, at the Tuesday afternoon farmers’ market in front of the County Health Services building on Caroline Street, and on Saturday mornings in downtown Rockingham. Her husband, Chris, watches their two young children while she works at the market. She is not obliged to attend every time, so she can take a weekend off to go to the beach, or decide week to week whether she has sufficient supply to be worth going to the market. Besides cucumbers, she sold tomatoes, watermelons and some of the best blueberries I have ever tasted. She enjoys getting to know the other vendors as well as meeting the customers.

Sommer likes trying out new crops and methods in her garden. Recently she set up a composting system, and she is testing out a raised bed. She is hoping to be able to grow some of the crops organically, giving her a unique niche at the market. Besides the annual crops, she has a few blueberry bushes and muscadine grape vines, and she harvests pecans from a tree at her mother’s house.

The Rockingham Farmers Market could use more growers like Sommer to round out its offerings and to provide a greater supply of popular items like tomatoes. Mostly the vendors can continue to grow their crops as they always have, but a few rules need to be observed to ensure that the food meets regulations for selling to the public. For example, any pesticides the grower uses on crops destined for market must be labeled for commercial use, not just for home gardening. The grower needs to follow the label directions exactly. If manure is applied, 120 days must pass before harvesting crops in contact with the soil, and 90 days for crops not in contact with the soil. For the most part, though, growing for the market is similar to growing just for fun.

Gardeners may also coordinate to sell each other’s produce, as long as at least 52% of the sales are from the Association member. This week, for example, Sommer will start selling lettuce and flowers from Peachview Farms, near her in Hamlet, on commission. Josh Blake buys apples from Ken Chappell and sells them at the Rockingham market. The sellers and product do not have to be from Richmond County, as long are from counties adjacent to Richmond County.

Not only produce, but also flowers and potted plants can be sold at the farmers’ market. This year, for example, Brooke DeWitt Monroe experimented with growing potted mums at her dad’s farm to sell at the farmers market and at some local produce stands. I bought one in early October and I am still enjoying its flowers.

Now is a good time to start planning if you would like to make your garden pay for itself or to earn a little extra spending money. However, if you just find yourself with too many cucumbers next summer, that would not be too late to sign up to sell at the Rockingham Farmers’ Market. For more information on growing crops for market, contact NC Cooperative Extension, Richmond County Center at 910-997-8255, or visit our website, richmond.ces.ncsu.edu.

Nancy Power is the Commercial Horticulture Agent for the Richmond County Cooperative Extension.

Let's Talk Food: Meals in bowls - Hawaii Tribune-Herald

teke.indah.link

Are you getting tired of being stuck at home and cooking three meals a day for the family? It seems to be a common complaint I hear again and again from parents.

I like bowl meals, where the protein and vegetables are on top of a carbohydrate. It is a good way to assure your family gets at least five fruits and vegetables per day.

ADVERTISING

Here are a few bowl meals your family might enjoy.

California Roll Sushi Bowls

Serves: 5

2 cups Calrose short grain rice

4 tablespoons rice vinegar

4 tablespoons sugar

1/2 teaspoon salt

1/4 cup mayonnaise

1 1/2 tablespoons Sriracha

1/4 cup soy sauce

1 tablespoon rice vinegar

10 ounces crab or imitation crab, cut into bite-size pieces

1 1/2 cups Japanese cucumber

3/4 cup roughly chopped matchstick carrots

1 nori sheet, chopped or crumbled into small pieces

1 1/2 tablespoon chopped pickled sushi ginger (gari-gari)

1 large avocado, peeled and diced

Black and toasted sesame seeds, for garnish or furikake

Wash rice several times until the water is clear. Transfer to pot of rice cooker, add 2 1/4 cups water and cook.

Make the vinegar/sugar for the rice by adding rice vinegar, sugar and salt in a small saucepan and cook until sugar is dissolved.

When the rice is cooked, while still hot, drizzle the vinegar/sugar over the rice, mix by gently tossing the rice to evenly coat.

In a small bowl, whisk together mayonnaise and Sriracha. Transfer to a squeeze bottle or sandwich-size resealable bag. Set aside.

In a small bowl, whisk together soy sauce and 1 tablespoon rice vinegar, set aside. In a large bowl, gently toss crab meat, cucumber, carrots, nori, ginger and avocado. Divide prepared rice among 5 bowls. Top evenly with crab mixture, then spoon soy sauce mixture over each bowl. If using a resealable bag, cut a small tip from the corner of the bag and drizzle mayo/Sriracha over top. Sprinkle with furikake.

•••

Taco Bowls

Serves: 10

1 boneless beef chuck roast (2 1/2 pounds), cut in half

1/4 cup beef broth

1 tablespoon vegetable oil

1 small onion, finely chopped

1 jalapeno pepper, seeded and finely chopped

1 garlic clove, minced

1 tablespoon chili powder

1 1/2 teaspoon ground cumin

Pinch salt

2 cups canned crushed tomatoes in puree

1 cup salsa verde

5 cups hot cooked brown rice

1 (15-ounce) can black beans, rinsed, drained and warmed

1 cup pico de gallo

Sour cream, shredded cheddar cheese, sliced avocado, lime wedges, warmed corn tortillas

Place beef and broth in a 5-quart slow cooker. Cook, covered, on low for 6-8 hours, or until meat is tender.

Remove beef, discard juices. Return beef to slow cooker, shred with forks. In a skillet, heat oil over medium heat; saute onions and jalapeno until softened, 4 minutes. Add garlic and seasonings, cook and stir 1 minute. Stir in tomatoes and salsa, bring to boil. Add to beef, stirring to combine. Cook, covered, on high for 1 hour or until flavors are blended. For each serving, place 1/2 cup rice in a soup bowl. Top with beef, beans and pico de gallo. Serve with sour cream, cheese, avocado, lime wedges and corn tortillas.

You will have leftover beef. Freeze it, and when you want to eat it partially thaw it in the refrigerator overnight. Heat through in a saucepan, stirring occasionally.

•••

For a local taste, how about a teriyaki chicken bowl?

Teriyaki Chicken Bowl

Serves: 8

8 cups cooked rice

2 pounds boneless, skinless chicken thighs, visible fat removed

1/2 cup soy sauce

1/2 cup sugar

2 cloves garlic

2 cups corn kernels

2 cups cucumbers, large dice

2 cups shredded cabbage

Shredded nori

Furikake

Whisk together soy sauce, sugar and garlic and marinate chicken thighs for 1 hour. Grill chicken until cooked through.

Slice chicken, set aside.

Place marinade juices in a small pot and cook for about 5 minutes.

Place rice in bowls, divide chicken, corn, diced cucumbers, shredded cabbage on rice. Drizzle marinade over, then sprinkle with furikake and shredded nori.

The starch could be noodles like this Vietnamese noodle bowl.

Vietnamese Noodle Bowl (Bun Thit Nuong Cha Gio)

Lemongrass pork:

12 ounces pork chops, thinly sliced

1 stalk lemongrass, minced

2 cloves garlic, minced

3 tablespoons fresh cilantro, chopped

3 tablespoons soy sauce

1 tablespoon fish sauce

1 1/2 tablespoons honey

1 tablespoon dark brown sugar

Nuoc Cham Sauce:

1/2 cup water

3 tablespoons sugar

2 1/2 tablespoons lime juice

1 bird’s eye or Thai chili, very thinly sliced

Noodle Bowls:

6 ounces rice vermicelli noodles

4-6 cooked spring rolls, sliced into bite-sized pieces

1 head green leafy lettuce, chopped

1 medium cucumber, thin matchsticks

1 medium carrot, thin matchsticks

1/4 cup chopped peanuts, roasted and unsalted

1 small bunch fresh cilantro

1 small bunch fresh mint

2 tablespoons vegetable oil

Marinate pork in marinade for at least 30 minutes or up to one day.

Whisk nuoc cham ingredients together and set ahead.

Cook noodles according to pork to heated directions.

Prepare spring rolls, lettuce, carrots, cucumbers and peanuts. Tear cilantro and mint leaves off their stalks.

Just before serving, heat a wok or skillet over medium-high heat. Add oil and, using a slotted spoon, transfer pork to heated oil. Stir-fry pork until it begins to cook on the outside, about 1 minute. Pour remaining marinade over pork and bring to simmer. Simmer pork in marinade until it reduces by at least half. When the pork is cooked through, remove the wok from the heat.

ADVERTISING

Assemble bowls with lettuce and noodles. Top with all remaining ingredients and serve with nuoc cham sauce to dip in.

Can you solve the Japanese cucumber conundrum? - hortidaily.com

teke.indah.link

Consider this problem, derived from these Japanese phrases: boru niko (two balls), tsuna nihon (two ropes), uma nito (two horses), kami nimai (two sheets of paper), ashi gohon (five legs), ringo goko (five apples), sara gomai (five plates) and kaba goto (five hippos). How do you say “nine cucumbers”? Kyuri kyuhon, kyuri kyuko, kyuri kyuhiki or kyuri kyuto?

If that fires you up, you are probably not only a language-lover but a puzzle-solver, with the type of intellect that thrills not only to cryptic crosswords but to sudoku or brainteasers like the matchbox riddle. And Alex Bellos, who has the delightful job of “puzzle columnist” at the Guardian, has a book for you: The Language Lover’s Puzzle Book.

It begins with the Japanese conundrum above, and takes readers through a host of linguistic games that will stretch their minds in ways most were not aware they could be stretched.

About those Japanese cucumbers, unless you know a language that behaves similarly, like Chinese, you may not have thought to consider the shape of the objects being counted. In Japanese, this is integrated into the numbers themselves.

Cucumbers, long beans among 20 items under Deepavali price control scheme - The Edge Markets MY

teke.indah.link

KUALA LUMPUR (Nov 5): The Ministry of Domestic Trade and Consumer Affairs (KPDNHEP) has listed cucumbers and long beans in the list of 20 items under the Festive Season Maximum Price Control Scheme (SHMMP) in conjunction with Deepavali which will be celebrated on Nov 14.

Minister Datuk Seri Alexander Nanta Linggi said cucumbers and long beans were two new food items  placed on the price control list for Deepavali this year.

“These items have been included after receiving feedback from the Indian community and the trend study conducted by the ministry on goods that are in high demand during the Deepavali festival,” he said at a virtual press conference on the Companies Commission of Malaysia’s Facebook page here today.

He said the price control would be effective from Nov 9 to 17, which is five days before the festival day, on  Deepavali day and three days after the celebration.

Twenty items under SHMMP are live chickens; standard chicken; super chicken; local goat with bones; imported mutton and lamb with bones; grade A chicken eggs; grade B chicken eggs; grade C chicken eggs; tomatoes; imported round cabbage; okra; cucumber; long beans; dried chilli; coconuts; grated coconut; small red onions; imported large red onions; imported potatoes and dhal (pulses).

Nanta said the pricing of goods for the states was made according to the current market price and taking into account the price change, especially for imported goods affected by prices in the country of origin and changes in currency exchange rates.

“Action will be taken against traders who fail to comply with the regulations under this scheme.

“Legal action will be taken against errant traders under the Price Control and Anti-Profiteering Act 2011,” he said.

In an effort to protect consumers, he said, the ministry has also increased the presence of enforcement officers in selected places frequented by people.

The Japanese cucumber conundrum — and other fiendish lockdown puzzles for language lovers - iNews

teke.indah.link

You have a candle, a box of matches and some tacks. How do you affix the candle to the wall so the wax won’t drip on a table below? It is a classic problem first devised in the 1930s. Most people struggle with it.

The easiest solution: pour out the matches, and use the tacks and part of the matchbox to make a little shelf, which the candle can sit on.

The reason people struggle is “fixedness”: the association of candles with the matches themselves is so strong as to blot out the container. The idea that the box is more important simply doesn’t occur.

Language lovers

Now consider this problem, derived from these Japanese phrases: boru niko (two balls), tsuna nihon (two ropes), uma nito (two horses), kami nimai (two sheets of paper), ashi gohon (five legs), ringo goko (five apples), sara gomai (five plates) and kaba goto (five hippos).

It begins with the Japanese conundrum above (a hint at the answer is at the end of this article), and takes readers through a host of linguistic games that will stretch their minds in ways most were not aware they could be stretched.

The Linguistics Olympiad

Bellos was inspired by the Linguistics Olympiad, a competition for students that gives them problems like the Japanese one. It requires no knowledge of Japanese; questions are intentionally drawn from languages that the contestants won’t know.

The point is to piece together the answer using barely sufficient evidence, some common sense and some uncommon reasoning.
Uncommon, at least, to non-speakers of the languages involved.

Languages pay attention to different things: a famous formulation of this idea, by Roman Jakobson, a Russian-American linguist, is that languages differ not in what they can say, but what they must.

English-speakers take note of the distinction between “a man” and “the man”, which many languages could not care less about; when others learn English they have to force themselves to grapple with details that seem to them trivial.

Decoding ancient tongues

Bellos’s book is not just a puzzle collection, but an introduction to the science of distilling regularities from the weird ways in which languages behave.

History buffs will enjoy a chapter that focuses on decoding ancient tongues. Some of the challenges are just simple enough to impart a sense of confidence (such as matching runic inscriptions to Norse words and the names of gods). Some are so hard as to inspire awe for those who cracked them, like the deciphering of a passage of Old Persian in cuneiform script, starting with impossibly little information.

Bellos provides short narratives about such feats, and how they in turn inspired others -in this case, the interpretation of cuneiform writings from Babylon and Sumer.

Along the way, the seemingly exotic becomes familiar. In a simplified but realistic example, readers can reconstruct proto-Germanic, spoken 2,000 years ago but never written down, by figuring out patterns of difference in the daughter languages of German, Icelandic and English. Suddenly Icelandic looks like English’s cousin, which it is.

But the familiar also becomes exotic. The Tok Pisin creole of Papua New Guinea may be based on English, but few will guess that gras bilong dok is “the grass that belongs to the dog”, or fur.

Linguistic problem-solving

Many people think academic linguistics is either something to do with working out “correct” grammar (it isn’t), or with learning to speak a dozen languages (most linguists do not).

It is really about the kind of problem-solving that can help a field linguist translate an isolated unknown language, a historical linguist reconstruct a never-written tongue, or a computational linguist code a computerised translation system.

Many beginners, after the buzz of Bellos’s puzzles, may also fall in love with the joys of this misunderstood discipline.

About those Japanese cucumbers. Unless you know a language that behaves similarly, like Chinese, you may not have thought to consider the shape of the objects being counted. In Japanese this is integrated into the numbers themselves.

Once you’ve found the solution, and those to many other comparable problems, it will become second nature to think outside the matchbox.

Swedes crack sea cucumber culture - The Fish Site

teke.indah.link

The breakthrough came as part of a project that aims to strengthen wild populations of sea cucumbers and to look into their potential use in aquaculture.

“This is a big first step towards being able to raise large numbers of sea cucumbers to be able to release them into the sea and strengthen populations that for various reasons have decreased,” said Ellen Schagerström, a marine biologist at the University of Gothenburg.

In 2019 Schagerström succeeded in getting red sea cucumbers to multiply in captivity for the first time in Sweden. This year, two sea cucumber larvae also passed through all three larval stages and developed into juveniles.

“Last year, we focused on the first larval stage and examined what they ate and how much they ate. When we cracked that, we were able to optimize that stage this year and that got them to juveniles,” she explained in a press release.

“I've used protocols for other species and tried to adapt it because this is a cold water species. Many of the species of sea cucumbers that are grown are tropical or more temperate species,” she added.

The long-term goal for the research is to be able to breed sea cucumbers and then release them into the sea to replenish wild populations in areas such as Gullmarsfjorden, where the population has been decimated by trawlers.

“It has been documented that a lot of sea cucumber has been caught in trawl lines before, but it has become less and less common, and now it is very rare. Even commercial fishers who often used to get sea cucumbers in crayfish cages rarely see them today. It is worrying,” said Schagerström.

A large population of sea cucumbers is required for them to reproduce.

“During reproduction, sea cucumbers gather in groups and release their gametes in the sea. But in the water, the cells are diluted. There need to be a lot of sea cucumbers if there is to be any fertilization. We do not know how many, but probably more than there is now in Gullmarsfjorden,” she reflected.

Even a fertilized egg has a low chance of going through all stages of development and eventually becoming a full-grown sea cucumber.

“They have a natural survival of less than one percent in a laboratory environment. And that is without anyone trying to eat them. If there is one thing that is guaranteed to happen in the sea, it is that someone is going to try to eat you,” she noted.

Aquaculture potential

Sea cucumbers live on the seabed and eat waste from fish, mussels, and pieces of dead algae that sink to the bottom. This makes them potential candidates for use in integrated multi-trophic aquaculture (IMTA) systems.

“If you have sea cucumbers beneath the cultivation of algae and oysters, you'll get more sea cucumbers instead of a lot of waste. It will be better, sustainable and there will be no negative impact on the environment,” said Schagerström.

Sea cucumbers are also considered a delicacy in many parts of Asia, the average price for a kilo of dried red sea cucumber is around 3,500 krona (£305).

“As a farmer, you get someone to clean for you which you later can sell as a luxury product at a high price. So it doesn't matter that they take a long time to grow,” Schagerström explained.

How fast the species grows, when they reach sexual maturity, and how long they live is still unknown. By monitoring the two juveniles, Schagerström hopes to get an answer.

“We are in unknown territory again. Now that we have juveniles, the next step is to find out how fast they grow and how much waste they can eat,” she said.

The breeding of sea cucumbers is part of the SWEMARC project Circular, which is financed by the Swedish Board of Agriculture.

If you fancy growing your own, they’re a great choice – they’re abundant and easy to grow. Yee had a bumper crop this year and says they can be grown in a greenhouse or in the ground.

“Cucumber plants can quite happily grow outdoors as well as under glass,” says Yee.

“There are some rich cucumbers that are quite happy to sprawl on the ground outdoors and be perfectly productive. It depends on the variety.”

Unfortunately, cucumbers do have one major enemy – powdery mildew!

A fungal disease that affects the leaves and stems of the plant, it manifests as white powder deposits on the plant. At first sign, you need to remove the affected leaves, but Yee says that prevention is the best way to get on top of it.

“What I do is keep the greenhouse well ventilated” advises Yee. “I also remove any excess foliage so that it helps to improve the air circulation.

“The other thing to do is when you're watering the plants, water at the base, don't water the leaves and only water early in the day - not in evenings - to allow the plants to dry out before night fall.”

One inventive way to grow cucumbers is vertically, which helps prevent any soil borne diseases.

“I use a bamboo support structure and they can climb upwards,” explains Yee. “Then I've even got a horizontal mesh where the fruit can hang downwards, which makes for really easy picking.”

Generally, a healthy cucumber plant can produce up to 10-15 cucumbers and if you’re bored of regular salad, Yee has some really tasty alternative recipes to use up those surplus veggies!

Watch: Use your leftover cucumbers and tomatoes to create a punchy Thai style beef salad

“This is probably my favourite salad of all time,” says Yee about her Thai Beef and Cucumber Salad, which uses chillies and herbs to create the perfect, easy-to-make midweek meal.

THAI BEEF CUCUMBER SALAD

Ingredients

250-300g of beef steak such as beef bavette, rib eye or sirloin
Sunflower oil, to brush
Salt & pepper
2 medium cucumbers, topped and tailed, cut into pieces
2 handfuls of mixed sized tomatoes (cherry tomatoes - halved, medium sized tomatoes - cut into wedges)
1/4 of a red onion, sliced thinly
Handful of mint, leaves picked and torn
Handful of coriander, leaves picked

Dressing

3 tbsp fish sauce
2 tbsp lime juice
1 tsp palm sugar (or your choice of sweetener)
2 garlic cloves, minced
1 small red chilli, finely sliced

Method

1) Preheat a pan on high.

Brush steak with oil and season with salt and pepper.Add steak to the pan and cook to your liking.  (For medium, cook for approximately 2 - 3 minutes each side.)

Remove from heat and set aside to rest.

2) Meanwhile, make the dressing. Into a jug or bowl, add the garlic, fish sauce, palm sugar, lime juice and palm sugar and mix well.

3) Place cucumbers, tomatoes, red onion, mint and coriander into a large bowl. Pour over 3/4 of dressing and gently toss through.

Use young cucumbers that are crunchy with small tender seeds like 'Mini Munch'. Popular tomato varieties like 'Sungold' or 'Tigerella' all work well in this salad.

4) Slice beef across the grain into bite sized pieces.

5) Arrange salad onto a serving platter. Add beef and drizzle over remaining dressing.

Watch: Use your leftover cucumbers to whip up a zingy Chinese cucumber salad

Not only is this an easy way to use up surplus cucumbers, but it’s an easy way to add some flavour.

Yee says: “This is my favourite way of using up cucumbers, because it really takes a bland neutral cucumber and turns it into something really delicious!”

You’ll also get to release some stress as you have to bash the cucumbers up! This helps create a coarse texture so that it holds onto the zingy sauce nicely.

CHINESE CUCUMBER SALAD

Ingredients

2-3 medium sized cucumbers, topped and tailed
3 garlic cloves, minced
1 tbsp rice vinegar (or Chinese Chinkiang vinegar)
1/2 tbsp sesame oil
1/2 tsp light soy sauce
1/2 tsp sugar
Pinch of sea salt

Method

1) Smash cucumbers using a heavy blunt instrument like a pestle or rolling pin. Cut into bite-sized pieces. Transfer into a large bowl.

Use young cucumbers that are crunchy with small tender seeds - a variety like 'Mini Munch' works well.

If using cucumbers with large seeds or a lot of watery content, use a spoon to scrape out and discard the pulp. Peel the cucumbers if they are bitter.

2) Into a separate bowl, combine garlic, vinegar, sesame oil, light soy sauce, sugar and mix well.

3) Add dressing to cucumbers and toss through, making sure each piece is coated in the dressing. Add salt to taste.
