Julie Anne's Favorite Summer Salad - WNWN-FM

I'm always looking for recipes! I search the internet, cookbooks and magazines to find them. Because I love to cook, discovering an AMAZING salad made my day! I just had to share!

Summer and salads just kinda go together, don't you think? Getting invited to a party and asked to bring a salad was the reason for this hunt. And I like to switch things up when bringing a dish to pass.

I bought the magazine "Taste of Home WHAT CAN I COOK IN MY...?" Instant pot, air fryer, slow cooker and more. While reading, I came across "YUMMY CORN CHIP SALAD on page 108. No joke~! They mean it! Yummy! In this recipe you will use your food processor/blender.

Recipe...

3/4 cup canola oil

1/4 cup cider vinegar

1/4 cup mayonnaise

2 Tbsp yellow mustard

1/2 tsp salt

3/4 cup sugar

1/2 small onion

3/4 tsp poppy seed.

Blend first 7 items together until smooth then stir in poppy seeds.

SALAD

2 bunches leaf lettuce

1 pkg  9  1/4oz corn chips

8 bacon strips, cooked and crumbled (If short on time, use real bacon bits)

1 cup shredded part-skim mozzarella cheese

1 cup dried cranberries (Aldi's is a good price)

Place salad ingredients in a large bowl: toss with dressing. Serve immediately!  Enjoy! This makes 12 servings. Cut the recipe in half if you are feeding only a few.
