Spinach and cottage cheese triangles with fresh herbs

Cottage cheese is a great ingredient to keep on hand for snacking and goes perfectly mixed with spinach and fresh herbs in these crispy triangles.

Ingredients

  • 150g spinach (baby spinach, English spinach or silverbeet)
  • 2 garlic cloves, finely chopped
  • 2 shallots, thinly sliced
  • 1/2 cup fresh basil, chopped
  • 1/3 cup fresh mint, chopped
  • 500g cottage cheese
  • salt & pepper
  • 1 egg
  • 375g filo pastry
  • 1/2 cup butter, melted
  • sesame seeds, optional

Method

    Preheat oven to 180°C. Line to flat baking trays with baking paper.

    Blanch the spinach in boiling water until it softens and turns bright green. Squeeze out the water and chop roughly before adding to a medium-sized bowl.

    Add the cottage cheese, fresh herbs, egg, shallots and garlic and mix until well combined. Season generously with salt and pepper.

    Remove filo pastry from the package and cut log into thirds (or quarters if you want smaller triangles). When filo is unravelled you should have three piles of long strips of pastry.

    Begin with one pile of the pastry, keeping the remainder under a damp tea towel so that it doesn't dry out. Lay the first sheet on your bench and using a pastry brush, paint the sheet of filo with the melted butter. Stack another sheet on top of the first and paint with butter again. Continue until you have a pile of four sheets.

    Put a tablespoon-sized dollop of the cottage cheese mixture on the bottom right of the pastry. Fold the bottom right corner of the pastry encasing the filling inside a triangle. Fold the triangle up on itself continuously until you run out of pastry. You should have a triangle with no exposed filling. Brush the final edge with butter and fold over to seal.

    Place each of the triangles on a baking tray and brush the tops with butter. If you have sesame seeds sprinkle a pinch on top of each triangle. Back for 12-14 minutes or until golden.
