Shaved Zucchini Salad
Ingredients
- 2 carrots
- 3 small zucchini
- 2 small yellow summer squash
- 1 (15-oz) can chickpeas, drained and rinsed
- ¼ cup extra-virgin olive oil
- 1 cup packed Italian parsley, coarsely chopped
- ½ cup packed fresh basil leaves, shredded
- 4 Tbsp red wine vinegar
- ½ tsp salt
- Pepper
Directions

Trim off ends, but not tops, of carrots and squash. Holding each vegetable by its top, with a sharp vegetable peeler, shave down one side in even slices. Turn and continue shaving until peeler will not shave more. Place vegetables in a large bowl.

Add chickpeas and oil. Toss gently with your hands. Add parsley, basil, vinegar, salt and pepper. Taste salad just before serving and season as desired.
