Shaved Zucchini Salad

Ingredients

  • 2 carrots
  • 3 small zucchini
  • 2 small yellow summer squash
  • 1 (15-oz) can chickpeas, drained and rinsed
  • ¼ cup extra-virgin olive oil
  • 1 cup packed Italian parsley, coarsely chopped
  • ½ cup packed fresh basil leaves, shredded
  • 4 Tbsp red wine vinegar
  • ½ tsp salt
  • Pepper

Directions

  1. Trim off ends, but not tops, of carrots and squash. Holding each vegetable by its top, with a sharp vegetable peeler, shave down one side in even slices. Turn and continue shaving until peeler will not shave more. Place vegetables in a large bowl.

  2. Add chickpeas and oil. Toss gently with your hands. Add parsley, basil, vinegar, salt and pepper. Taste salad just before serving and season as desired.
