Just Salad to Add “Climatarian” Menu Reflecting Carbon Footprint Associated with their Salads - One Green Planet

On September 17, Just Salad will launch a “Climatarian” Menu with seven items with the lowest greenhouse gas emissions as well as new carbon labels for menu items.

Part of its “Eat for the Earth” campaign, Just Salad will offer its Climatarian Menu items at a price reflecting their individual carbon footprints –– for example, a salad with a carbon footprint of 0.41 kg CO2e (carbon dioxide equivalent) will cost $4.10.

Additionally, Just Salad will unveil its carbon label system that displays the greenhouse gas emissions associated with the production and transportation of the ingredients in each menu item. Just Salad is the first U.S. restaurant chain to have carbon labeled products.

The brand’s online ordering platform will allow consumers to calculate the greenhouse gas emissions of any build-your-own salad. Each item’s carbon footprint will be compared to that of a quarter-pound beef patty to help consumers understand the environmental tradeoffs of their food choices.

“Climate-smart eating should be easy, and our Climatarian menu takes the guesswork out of making sustainable food choices,” said Sandra Noonan, Chief Sustainability Officer of Just Salad. “Just Salad’s carbon footprint label is part of a growing movement toward Carbon Transparency in the food, beverage and consumer goods sectors.”

Among their plant-based options, Just Salad’s Climatarian Menu features a Tokyo Supergreens Salad, Tofu (0.41 kg CO2e), Beyond Tex Mex Salad (0.52 kg CO2e), and Banh Mi Bowl (0.56 kg CO2e).

The Climatarian menu and carbon labeling are Just Salad’s newest sustainability efforts following the introduction of plant-based Beyond Meat in 2019, and its EPA-award-winning Reusable Bowl Program.
