There comes a time each year when the season is noticeably changing, and with it, our tastes and cravings. Thoughts of cozy socks and cool evenings aren�™t complete without a bowl of something hot, steamy and comforting.
This creamy, decadent soup has minimal ingredients and maximum flavor and nutrition.
Total cook time to create this concoction is about 30 minutes, and it makes enough for four hearty servings. Multiply the recipe as necessary if you plan to share the gift of cuisine.
Ingredients:
1 sweet onion, chopped
1/2 head of garlic, minced
20 asparagus spears, chopped
1/2 cup olive oil
1 tsp onion powder
1 tsp Montreal Steak Seasoning
2 tbsp butter
2.5 cups vegetable broth
1 tsp black pepper
1/2 tsp turmeric
1 tsp salt, or more to taste
1 8-oz canister crispy fried onions
Prepare fresh ingredients by chopping the onion finely and mincing the garlic. Cut off tips of the asparagus spears and set aside. Chop the rest of the stalks into 1-inch sections.
Sauté onions, garlic and asparagus sections in olive oil in a pot over medium heat, sprinkling the onion powder and Montreal Steak Seasoning and stirring the butter into the vegetable medley once it�™s hot and sizzling.
When the vegetables are soft, after about 8 minutes, add vegetable broth, black pepper, turmeric and salt, and turn down the temperature to low-medium, so the mixture reaches a gentle bubble. Allow to simmer for approximately 15 to 20 minutes.
While the soup mixture is simmering, sauté the reserved asparagus tips in olive oil until they appear crisp and bright green.
After the vegetables are tender and the soup has thickened somewhat, use a hand mixer to blend the soup or pour it into a blender and puree it. Either way, the soup should look creamy and cohesive in the pot before serving.
Once the soup is blended, it�™s time to fill individual soup bowls and generously garnish with the sauteed asparagus tips and crispy fried onions.
Every spoon will make you swoon.
