This recipe was submitted by R.J. of Pilot Hill, who says, “I always serve this with hot dogs or hamburgers on the side because the ingredients in this salad complement the dogs and/or burgers so well. My mother made up this dish many years ago and always added chopped ham to the salad, so take your pick.

Baked Bean Salad

Ingredients

1/4 cup light molasses
1 tablespoon yellow mustard
2 tablespoons each salad oil and cider vinegar
1 large (1 lb. 15 oz.) can pork and beans with tomato sauce
1 cup each: diced cooked ham and thinly sliced celery
1/2 cup each: sliced green onions, chopped carrots, chopped sweet pickle and diced sharp cheddar cheese
1 large tomato, diced or 1 cup cherry tomatoes, halved
3 cups romaine lettuce or iceberg
2 or 3 sliced, hard-cooked eggs

Directions

1. In a large bowl combine molasses, mustard, oil and vinegar; blend well.
2. Discard pork fat from beans; add beans and their sauce to vinegar mixture along with ham, celery, onions, carrots, pickles, cheese and tomato. Mix gently until well coated.
3. Cover and chill for at least 2 hours or until the next day.
4. To serve, arrange shredded lettuce in a shallow salad bowl. Stir bean mixture and then spoon over lettuce. Garnish with egg slices. Eat as is, or serve with hot dogs and/or hamburgers.

Q: I’m a newlywed and don’t know much about pie making but my husband loves them. The recipe I want to try calls for “crimping the edges.” Can you describe what that means exactly, and how to do it?

A: Crimping a crust means to pinch or press two pastry edges together, thereby sealing the dough while forming a decorative edge. You can do this by gently using your fingers, fork or other utensil.

The pastry for a single-crust pie is crimped by turning it under to form a ridge, then shaping (or fluting) the raised edge into a fancy pattern by gently using your fingers in a back-and-forth motion all the way around the crust. A raised, crimped edge not only seals the pastry but acts like a dam to contain the filling during cooking.

Some kitchen hints regarding preparation…

• Set up your workspace by gathering clean tools, bowls and utensils. And make sure to keep a trash can within arm’s reach.

• Invest in a baking scale. Scales are not only an accurate way to measure your cooking ingredients but they streamline the entire process. You may not use it a lot but when you need it, you’ll have one.

• Always read and re-read your recipes before you start your cooking or baking.

• When baking it’s helpful to set out your dry ingredients ahead of time – baking powder, salt, baking soda, flour, sugar and the cup sizes or teaspoon/tablespoon sizes you will need for each.

• Clean up as you go — one of the best hints ever!
