Just eight weeks ago, Michael Marks was driving along South Bend Avenue near Notre Dame when a “for rent” sign caught his eye.
“I called the landlord on Friday and didn’t hear back until Sunday,” Marks said. “And between that time, (my wife) Carrie and I were talking ‘we should open a restaurant.’”
Having over 25 years of experience working in the restaurant industry, Marks believes there’s a need for fresh and quick options in the area and, since Carrie has always enjoyed his salads, the couple decided to run with it.
“So we kind of built it around that,” he said.
The business will offer nine signature salads, such as a southwest salad with avocado, black beans and corn, a kale salad with beets, ancient grains and pumpkin seeds, Chef Mike’s signature salad with homemade cashew brittle, pears, cranberries and more.
Each salad can be personalized and protein such as chicken and salmon can be added, but for those looking to personalize most toppings, Marks recommends ordering the garden salad and building from there.
Each salad comes in a full or side salad size and comes with fresh ingredients with made-from-scratch dressings. Customers will have the option to get their salads “tossed” with the dressings.
“If you’re going to eat my salad within the next 10 to 15 minutes, let me toss it for you,” Marks said. “It’s a totally different experience to get a salad that’s been tossed. And, if you aren’t going to have me toss your salad, the bowl has a dome lid, to give the space to toss it yourself when you’re ready.”
In addition to the salads, Tossed ToGo plans to offer baked goods, such as a corn cake, that will come with salad entrees and brownies with strawberries. It also plans to sell the homemade cashew brittle by itself.
The business also looks to offer the occasional soup and salad combo, but has no plans to add it to the personal menu. About 20 different bottled drink products, which Marks describes as “high end,” will also be available inside the restaurant.
Customers can expect to order and pick up their salads within five to 10 minutes after arriving, Marks said, depending on how busy the business is at the time.
There are no tables to eat inside, so the restaurant has a true to-go format. A carryout window allows those who ordered ahead on the business’ website to pick up quickly and, in light of the pandemic, the restaurant is also offering curbside carryout services, as well as delivery options through third party sites such as DoorDash and GrubHub.
The business is notably located on a very busy stretch of South Bend Avenue, so to catch customers’ interest, the couple commissioned local muralist Alex Van Galder to create the Muppets character Swedish Chef, which now colorfully covers the southeast side of the building.
“I’ve worked for so many restaurants where it’s so serious, but we’re going to have fun,” Michael Marks said. “I want to have fun interacting with people and we want to make that lasting impression.”
Tossed ToGo will be open Monday through Saturday from 10 a.m. to 6 p.m.
