walnuts
apple pie spice
lemon juice
olive oil
salt
pepper
stalks celery, thinly sliced
Bartlett pear, thinly sliced
bulb fennel, thinly sliced
scallion, thinly sliced
small bunches arugula, thick stems discarded
- On baking sheet, toss walnuts with apple pie spice and roast at 400°F until fragrant, 10 min., then roughly chop.
- In bowl, whisk together lemon juice, olive oil, salt, and pepper. Add celery, pear, fennel, and scallion and toss to combine.
- Just before serving, toss arugula with pear mixture and serve with spiced nuts.
