RICHMOND, Va. - Enjoy the taste of summer this winter with a delicious grilled peach salad! Friend of the show Chef Andre Smith of Commonwealth Senior Living joins us today to share this savory salad recipe.

Savory Grilled Peach Summer Salad

Prep Time: 5 minutes Cook Time: 5 minutes Ready Time: 10 minutes Servings: 4

Ingredients

6 cups mixed summer greens (fresh mixed greens ex. Spinach, Bibb lettuce, and Arugula microgreens), cleaned *Commonwealth Senior Living features our Mixed Greens and Microgreen from our Babylon Microfarms

2 cup mixed herbs (ex. Tarragon, Dill, Mint, and Basil), chopped *Commonwealth Senior Living features our Fresh Herbs from our Babylon Microfarms

2 each fresh peaches, peeled, sliced, and grilled

1 each small red onion, peeled and thinly sliced

1 cup walnuts nut, candied

DRESSING

1/4 cup olive oil

1 tbsp. red wine vinegar

1 tbsp. orange juice

2 tsp. Dijon mustard

2 tsp. honey

Salt & Pepper to taste

1 small shallot, finely chopped

Directions

1. In a medium bowl toss, all the mixed greens together excluding the microgreens, and set the mixture to the side

2. In a separate medium bowl whisk together shallots, red wine vinegar, orange juice

3. Continue to whisk while slowly adding the honey, Dijon mustard, and olive oil and to ensure the dressing pulls together

4. Season dressing with salt and pepper to taste

5. Using a large dinner plate, place greens in the center of the plate, top mixed greens with the microgreens

6. Add the grilled sliced peaches, sliced red onion, and candied walnuts

7. Drizzle dressing over salad and serve
