Gobbling down a plate full of potato chips while watching your favourite movie is pure bliss! But the mere thought of consuming calories, additives and preservatives may often make you ditch your favourite munchies.

Even according to health experts, making potato chips at home is a way more healthy options as compared to gorging on a store bought pack of wafers. We often fall for the endless variety of flavours, when it comes to enjoying potato wafers, but we tend to ignore the fact that these have additives that cause more harm than we can think of!

02/3Why are preservatives in potato chips harmful?

To retain the colour, taste and texture a small amount of a chemical substance called sodium bisulfite is added to packaged potato chips. The same substance is found in most toilet cleaners, however when it comes to chips only a small amount is added, but the amalgamation of vitamin B12 and sodium bisulfite can turn lethal in some cases as some potato varieties are rich in vitamin B12. Thus it is not a great idea to grab a pack of potato chips.

03/3​How to make healthy preservative free potato chips at home

To begin with this easy recipe, wash and peel the 5 large potatoes. Then using a knife or a potato slicer make very thin slices.

In the meantime, take a large bowl and fill it with lukewarm water and dip the potato slices in the water and repeat this process twice with the entire batch of potatoes. This will help in removing the presence of scratch from the potatoes.

Next, if you want to add in some spice flavours, just drain the potato slices from the water and coat them nicely with salt, spices or herbs and keep them aside to absorb the goodness of flavours.

Then in large open trays sun dry the potato slices, this will help in absorbing the moisture from the potatoes, which will give your wafers a good shelf life. However, this process goes well only during summers or when the sunlight is sufficient.

Once the slices are sun dried you can either store them in an airtight container and fry them as and when needed or you can heat a pan with oil and fry them chips over low flame and quickly take them out on a paper towel to absorb excess oil make sure you don't over fry the chips and it will spoil the texture.

If you want to make the wafers absolutely healthy, then you can either fry them using an air fryer or else take a large wok filled with salt and once the salt is hot enough, dry fry the sun dried potato wafers.

Note:

To ensure the chips have the perfect texture and taste, keep the slices very thin and sun dry them and enjoy!

In case, you want to store the chips for a long time, just par boil them with some salt and edible fitkari (alum) which works as a natural and safe preservative, just make sure that you don't add too much of alum else it will change the taste.
