Yields: 2 servings

small head green leaf lettuce, torn
shredded rotisserie chicken
canned pinto beans, rinsed
fresh corn kernels (from 1 ear)
red onion, thinly sliced
fresh lime juice, plus wedges
olive oil
honey
Kosher salt and pepper
- Divide lettuce, chicken, beans, corn, and onion between two containers. Add a lime wedge to each.
- In a bowl, whisk together lime juice, oil, honey, and pinch each salt and pepper. Divide among two tiny containers and pack with salad. Drizzle over just before eating.
