Let us start by saying, this is more of a lunch dish. It’s much lighter and goes great with a bunch of smaller snacks. This is perfect if you are really trying to get healthier. You can do a lot of different things to jazz it up, but give it try!
Tomato Cucumber Chickpea Salad
Ingredients
For the salad…
Tomatoes (cherry/grape work best but you can use any kind)
1 can chickpeas
½ cucumber (I like English cucumbers)
For the dressing…
Lemon juice
Olive oil
Red wine vinegar or balsamic
Garlic powder
Parsley
Red pepper flakes
Salt/pepper to taste
OR
Can use a Greek or Balsamic vinaigrette
Optional add ins…
- Red onion
- Avocado
- Feta cheese
- Boiled eggs
Directions
- Pour all ingredients into a bowl and mix until well combined
- Eat as is or in a pita/wrap would be good too
