
Do you like baked potatoes? If so, then this recipe is definitely for you. My family and I love baked potatoes. When we tried this casserole, we instantly knew it was a recipe worth keeping.
If you enjoy a loaded baked potato, then you can vary the ingredients in this dish. I kept mine simple, but added topping options, like fresh chives and bacon bits.
I also used the microwavable potatoes in plastic film to make this recipe a cinch. The microwavable potatoes only take about 7-8 minutes. However, you can also bake the potatoes in the oven prior to compiling this casserole.
Four baked potatoes make a large casserole, so if you want to serve only two, then cut this recipe in half. However, it makes for great leftovers.
With grilling season upon us, this recipe will perfectly complement grilled meat and veggies. I hope you give it a try.
Bakes Potato Casserole
4 microwavable potatoes
1 (1 pound) container of light sour cream
1 (16 ounce) bag of cheddar cheese
2 teaspoons salt
Bacon bits (optional)
Fresh chives (optional)
Begin this recipe by baking the potatoes. Either place them in the microwave or use the oven.
If you are using the oven, then preheat the oven to 425 degrees. Brush the potatoes with olive oil and sprinkle with salt. Poke a few holes in each potato and bake for about one hour.
After potatoes are baked, cut each one into one-inch chunk pieces. I leave the skin on, but the skin is optional.
Preheat oven to 350 degrees.
In a 9 x 13-inch baking dish, add half of the potato chunks. Sprinkle half of the salt evenly atop the potatoes.
Now, with a silicone spatula, spread half of the sour cream evenly over the potatoes. Next, evenly sprinkle half of the cheese on top.
Repeat the layering process one more time. Bake in the preheated oven for about 15 minutes, or until cheese is melted. Add additional toppings such as bacon bits and fresh chives.
