Have you ever done any genealogy research? My family history includes the Irish – maybe why we love potatoes so much! The potato famine of the mid-1800’s drove many Irish to leave their homeland and head for America. In honor of that heritage, I offer a couple of favorite potato recipes.
Sesame Oven Fries
4 lg. baking potatoes (about 3 lbs.)
1 Tbsp. olive oil
1 Tbsp. sesame seeds
1 tsp. salt
½ tsp. pepper
Fresh-cut rosemary
Heat oven to 425°. Spray large shallow roasting pan with cooking oil. Cut potatoes lengthwise into ¾-inch-thick wedges. Toss potatoes with the other ingredients in a large bowl until well-coated. Place in prepared pan. Bake for 40 to 45 minutes, or until potatoes are tender and golden brown. For extra crispness, broil potatoes for the last 5 minutes of cooking time.
Potato Awesomeness
1 bag (2 lb.) frozen hash browns, thawed
½ c. butter
1 tsp. salt
½ c. chopped green onions
1 pint sour cream
1 can cream of mushroom soup
2 c. shredded cheddar cheese
Heat oven to 350°. Combine all ingredients except hash browns. Then stir them in. Pour into a greased baking dish and top with more cheese. Bake for one hour.
On a totally different subject … I was trying to remove a label from a pretty jar today, and thought I should share my trick with you. It works like a lucky charm!
Homemade Goo-Gone
1 part coconut oil
2 parts baking soda
Few drops of orange or lemon essential oil (to boost the de-greasing properties)
Remove as much of the label or sticker as you can before beginning. Combine the ingredients in a small bowl, and mash together with a spoon or small spatula until it forms a thick paste. Apply with your fingers or a cloth, rubbing it in until the label or sticker is completely gone. With a particularly stubborn label, you may need to let the concoction sit for 5 or 10 minutes and rub it some more. Wash with warm water and soap or rubbing alcohol to remove any oily residue. Store your homemade Goo-Gone in a sealed container.
