
To boil potatoes, rinse and cut them into sizable chunks. Add the potatoes to a medium-sized pot and cover them with cold water. Make sure the potatoes are covered by at least 1-2 inches of water. Bring the water to a boil over high heat. When the water reaches a boil, turn down the heat slightly to a light boil or high simmer. The water should be simmering, but you don't want a rolling boil as this can quickly overcook the potatoes. Keep cooking until the potatoes are fork tender (meaning you can easily insert a fork into the flesh) but not falling apart. Drain the potatoes using a mesh strainer or colander. Make sure to drain them well, as any excess water will affect the final product.
