As I have written about before there are lots of kinds of potatoes. Ranging in colors, size, texture, and taste there is truly a potato out there for every person and every dish. One of the best uses of potatoes: potato salad. However, since taters are the main ingredient, the type you choose can make a big difference in your salad. Here are our thoughts on the best potatoes to use for potato salad.
Avoid Starch
This might seem obvious to some but potatoes like Russets are a no-go for potato salad. The added starch in a potato can provide fluffy tenderness which is great in a baked potato or French fry, but not in a salad where the potato has to stand up against a flavorful and often thicker dressing. Additionally when sliced, chopped, and mixed, starchy potatoes can start to almost partially mash and leave a layer of potato over everything. This does not make for a delicious potato salad!
You Got Two Options
Without starchy potatoes, you are left with the two other main categories of potato: waxy and all-purpose.
Waxy potatoes are, you guessed it, waxy and tend to have a bit more body and moisture content. They retain their shape very well when cooked, are excellent flavor absorbers and clearly are very good candidates for potato salad. Our favorite waxy salad potatoes are Red or Red Bliss potatoes. While also tasting delicious, we love that Red Potatoes have a thin skin, which means that peeling is totally optional. It'll add a pop of color to the finished dish and make prep much easier.
All-purpose potatoes are the middle ground between waxy and starchy and can be used when either are called for. The most iconic all-purpose potato are creamy Yukon golds. They're perfect for a richer, potato-forward salad.
