Ingredients

1/2 head iceberg lettuce, torn into small pieces

1/3 cup celery, diced

1/4 cup sweet onion, thinly sliced

1-3/4 cups frozen or fresh peas, cooked and drained

3/4 cup mayonnaise
-
1 tablespoon sugar
-
2/3 cup shredded Cheddar cheese
-
2 Roma tomatoes, cut in wedges
-
1 cup croutons
Directions
In a salad bowl, layer torn lettuce, celery, onion and peas. Combine mayonnaise and sugar. Spread mixture over peas. Sprinkle with shredded cheese. Cover tightly with plastic wrap and refrigerate prior to serving. Just before serving, add tomato wedges and toss well. Sprinkle with croutons. Yields: 5-6 servings.
