Summer Chicken Salad

I love that you can get creative with chicken salad. I especially love making it in the summer months because adding fresh fruit gives it awesome sweetness. Growing up my mom always used pineapple in our chicken salad but I changed it up and used red grapes. Between the flavor, texture and the secret ingredient in the dressing, this recipe will become your new go-to Chicken Salad recipe.

Prep Time 10 minutes | Total Time 10 minutes

Ingredients

● 2 cups cooked chicken {cubed or shredded}

● 20 red grapes {halved}

● 1/4 cup slivered almonds

● 1 stalk celery {chopped thinly}

● 1 green onion {sliced thinly}

Dressing

● 1/2 cup mayonnaise

● 1/4 tsp garlic powder

● 1/2 tsp salt

● 1/2 tsp black pepper

● 1/8 tsp nutmeg {optional}

● 1 tbsp milk

Instructions

1. In a medium bowl combine the chicken, grapes, almonds, celery and green onions.

2. In a small bowl combine the dressing ingredients and whisk until smooth. Pour dressing over the chicken salad and stir to combine. Making sure that all of the salad ingredients are completely coated.

3. Serve your chicken salad with grapes and almonds immediately or refrigerate for up to 3 days.
