Ingredients
- 1 head lettuce (or fresh garden greens)
- 1 cup black beans (rinsed and drained)
- 1 cup sweet corn (cooked and drained)
- 1/2 cup ranch salad dressing
- 1/4 cup mayonnaise
- 1/4 cup salsa
- 1 tomato, diced
- Cheddar cheese, shredded
- Tortilla chips, crushed
Directions
Tear lettuce in bite-size pieces and place in 9x13-inch pan or shallow bowl. Spoon beans and corn on top of lettuce. Mix together ranch dressing, mayonnaise and salsa. Spread over corn and beans. Just before serving add tomatoes, cheese and chips.

My husband, Galen Ray, is a steer farmer and also full-time shed hauler for Glick Woodworks. Our girls, ages 5 months to 8 years, are entertained these days playing with our four baby goats or riding bike. And on the hottest days, they enjoy water slides in our backyard.
