Greater Tater Soup
In a Dutch Oven:
1/4 cup Bacon grease
2 stalks Celery, chopped
1 Onion, diced
3 Garlic cloves, minced
Saute 1 – 2 minutes
Add 8 Potatoes, cubed. Continue cooking 3 – 4 minutes.
Add 4 cups Chicken stock.
Salt & Pepper to taste.
In a separate pot:
Melt 3 TBSP Butter
Mix in 1/4 cup Flour
1 cup Cream and let thicken
Add 1 to 2 cups of Velvetta
Add to main pot.
Potato Salad
2 quarts Red Potatoes boiled with 1/2 TBSP Salt.
6 Hard Boiled Eggs, mashed
2 1/4 cups Mayo
2 TBSP Pickle Relish
1/2 tsp Black Pepper
1/2 tsp Sugar
1/2 tsp Season Salt
1/2 tsp Yellow Mustard
Add cooled Potatoes after combining all ingredients.
