8 Easy Winter Salad Recipes—Because Soup Isn’t the Only Cold-Weather Dinner Staple To Love - Well+Good

When you think of wintery foods, warm and cozy things like soups and stews likely come to mind. But salads, my friends, can also be a staple winter meal if you play your cards right—and have a few winter salad recipes up your sleeve.

The secret to making a cold-weather salad sing is in the ingredients you choose. According to Amy Gorin, MS, RDN, a plant-based registered dietitian in the New York City area and owner of Plant-Based Eats, some of the most common winter salad ingredients include roasted vegetables (ideally ones that are in-season, like winter squashes and other root vegetables), vegetarian protein sources (think beans and eggs), and dark leafy greens like arugula and spinach. Celebrity chef and certified nutritionist Serena Poon also loves to use beets, butternut squash, Brussel sprouts, root vegetables, mushrooms, ancient grains, nuts, and warming spices like garlic and ginger in her winter salads. 

The beauty of salads, winter and otherwise, is that you really can’t go wrong. Choose ingredients you love, in this case, warming seasonal ingredients. Toss them together. Top everything with a dressing, and you’re good to go. But, just in case you need some winter salad recipe inspiration, keep scrolling for some recommendations from Gorin and Poon that will quickly become regulars in your winter dishes rotation. 

1. Vegan Mediterranean salad

Give a classic Mediterranean salad (which often features feta, olives, tomatoes, and mint) a vegan and wintery twist by tossing together chopped prunes, edamame, roasted beets, sliced almonds, arugula, parsley, mint, and red onion. “The edamame is a complete plant-based protein that’s wonderfully fueling for vegan eaters,” Gorin says. “The beets offer lots of health-helping antioxidants and filling fiber, and you get heart-healthy fats from the almonds.” Dress the salad with a homemade dressing made by cooking garlic and prune juice over medium heat for about eight minutes and whisking in vinegar, olive oil, and salt. Voilà, you now have dinner handled.

2. Roasted stuffed butternut squash salad bowl

This warm and cozy salad bowl, courtesy of Poon, stars roasted butternut squash as both the main ingredient and the bowl itself. And it’s jam-packed with nutrition, including fiber, potassium, manganese, antioxidants, and vitamin A, C, and E from the butternut squash. 

To make it, cut the butternut squash in half, drizzle some heart-healthy avocado oil over it, and season to your liking. Then roast it in the oven for 55 to 60 minutes at 425 degrees Fahrenheit. Meanwhile, for the stuffing, prepare some tri-colored quinoa according to package directions, then sauté kale and chickpeas with thyme sprigs, salt, pepper, orange juice, and orange zest. Add pomegranate seeds and pine nuts to the mixture. Once the butternut squash is ready and has cooled down, scoop out some of the flesh (leaving about a half-inch border around the sides) and stuff the squash with the quinoa and kale mixture. 

3. Warm Brussels sprouts, apples, and toasted almond salad

Nothing comforts quite like warm, nutrient-dense veggies on a chilly day, and this salad really delivers in that department. “Not only is this salad delicious, but it is also high in vitamin C, vitamin K, fiber, and other healthy vitamins and minerals,” Poon says. “Almonds supply vitamin E, magnesium, and more antioxidants, along with healthy oils that will keep you feeling satisfied.”

Make this salad by cutting the Brussels sprouts in half, placing them on a sheet pan, and drizzling some avocado oil over them. Bake them in the oven at 425 degrees Fahrenheit for 45 minutes, or until tender. Remove from the oven and place in a bowl, where you’ll combine with apple slices, toasted slivered almonds, and sea salt. Dress the salad with a honey lemon dressing made with—you guessed it—honey, lemon juice, plus whole-grain Dijon mustard and avocado oil.   

4. Earthy salad with tofu, farro, kale, and shiitake mushrooms

“This delicious salad will bring your energy down to earth,” Poon says. “It contains comforting foods and spices that will warm your spirit and boost your immunity and digestion. Kale is one of the healthiest foods on the planet, delivering potent antioxidants and an array of vitamins and minerals.”

Cook up your farro according to the package instructions. Saute one garlic clove and ginger in a saute pan. Add in diced tofu and saute until brown. Then saute kale and shiitake mushrooms in another pan until soft. Once everything is cooked, combine it all in a bowl and top it with miso dressing made by whisking together white miso, rice vinegar, honey, peanut oil, and sesame oil. 

5. Roasted beet and squash salad

Try another take on Poon’s favorite, beets, with this delicious beet and squash salad recipe from chef Nyesha Arrington. The roasted beets and squash are brought together with a zippy lime vinaigrette that brightens up the flavors of the dish. Watch the full video above to get the recipe.

6. Broccoli slaw salad with flax seeds and hemp seeds

“This is a time of year we’re cooking with lots of broccoli—so save those stalks and make a broccoli slaw salad,” Gorin says. “It’s wonderfully simple and has a texture similar to coleslaw but is much lighter and cuts down on food waste. This salad boasts filling avocado and lycopene-rich tomatoes.” 

To make it, combine pre-made broccoli slaw (or slaw you’ve made by pulsing broccoli crowns and stems in a food processor until shredded) with diced avocado and tomato in a large bowl. Toss in slivered almonds, ground flaxseeds, and hemp seeds, and sprinkle in some black pepper and salt. Lastly, top it with a dressing. Gorin recommends making one yourself by mixing rice vinegar, olive oil, and honey. In addition to being nutritious and easy to make, this broccoli slaw works as either a side salad to accompany other recipes, or you can make it the main attraction by topping with grilled tofu, salmon, or chicken breast. 

7. Roasted root vegetable salad with horseradish vinaigrette

“Root vegetables deliver a robust and delicious variety of healthy phytonutrients, antioxidants, and fiber,” Poon says. “They also supply grounding energy that can help you feel cozy in the throes of winter. Horseradish can support respiratory health, so this can be a nice salad to eat if you are feeling a cold coming on, and beets are a great addition for heart health.”

For this salad, you can use any root veggies; Poon’s favorites include beets, carrots, sweet potatoes, and turnips. Cube the root vegetables and drizzle avocado oil over them, then season with Himalayan salt and pepper. Roast them in the oven on a sheet pan at 425 degrees Fahrenheit for 45-55 minutes or until tender. Meanwhile, whip up the dressing with avocado oil, apple cider vinegar, lemon juice, grated horseradish, and honey. 

8. Warm anti-inflammatory vegetable salad

If you’re looking for a fool-proof winter salad recipe perfect for easy weeknight eating, look no further than this anti-inflammatory warm salad from chef Sam Kass. His liquid gold turmeric dressing is the perfect companion to your roasted vegetables of choice (Kass uses broccoli, cauliflower, carrots, and Brussels sprouts). Top with sliced shallots and parsley, and you’re good to go.

With pandemic stress-eating colliding with holiday feasts last week, many of us may be eyeing some healthy salads in the coming days. But if there’s one constant we can rely upon in this year of upheaval—it’s the enduring possibility that our leafy greens may be laced with poopy bacteria.

The Centers for Disease Control and Prevention currently has three open investigations on Escherichia coli outbreaks—two directly linked to leafy greens and the other involving a bacterial strain that caused an outbreak in 2018 linked to romaine lettuce.

Meanwhile, the Food and Drug Administration had issued four separate safety alerts for recalled salad fixings this month. Three of the recalls involved romaine lettuce—a now notorious source of gut-busting bacteria—for potential E. coli contamination. Over the past weekend, the FDA added baby spinach to the list, another common culprit, for potential Salmonella contamination.

Only one of the recalls has been directly linked to an outbreak so far. On November 6, Tanimura & Antle Inc. voluntarily recalled its packaged single head romaine lettuce (labeled as being packed on Oct. 15 2020 or Oct. 16, 2020) over possible E. coli contamination. Routine lab testing in Michigan picked out a strain of E. coli in the soiled salad sample that was found to be sickening people. In all, 12 people across six states were infected with that particular strain, and five of the infected people were hospitalized. Of 11 people interviewed, all reported eating various types of leafy greens, including romaine lettuce (5), spinach (5), iceberg lettuce (3), and red leaf lettuce (3), the CDC notes.

Poopy possibilities

The agency noted a similar pattern in another E. coli outbreak investigation, which was last updated November 23. In this outbreak, 39 people have been sickened across 18 states, with 19 people ending up in the hospital. Of 22 ill people health investigators have been able to interview, all reported eating a variety of leafy greens, such as spinach (16), romaine lettuce (15), iceberg lettuce (12), and mixed bag lettuce (8). “No single type or brand of leafy greens or other food item has been identified as the source of this outbreak,” the CDC added.

In the third E. coli outbreak investigation, researchers haven’t fingered leafy greens specifically. The outbreak, which began back in June, has sickened 21 people in eight states, with eight people needing hospitalization. One person has died. The CDC notes that the E. coli strain in this outbreak was also behind a massive multi-state outbreak back in 2018 linked to romaine lettuce. That outbreak sickened 210 people across 36 states, sending 96 people to the hospital. Five people died. The CDC cautioned that “food linked to a previous outbreak alone is not enough to prove a link in another outbreak of the same strain. This is because different foods can be contaminated by the same strain of bacteria.” The agency noted that “several” people sickened in the current outbreak seemed to all be infected at the same restaurant. Still, health investigators haven’t identified a specific food as the source of the outbreak.

In all the outbreak investigations, researchers have identified strains of E. coli O157:H7—that is otherwise harmless E. coli strains that carry disease-causing toxins that originated in Shigella dysenteriae bacteria (aka Shiga toxins). In infected people, Shiga toxins cause stomach cramps, vomiting, and diarrhea (often bloody). Some people develop low fevers. In serious cases, the toxins can cause a type of kidney failure called hemolytic uremic syndrome (HUS), which can lead to permanent organ damage and even death.

The main source of these E. coli O157:H7 strains is the intestines of livestock, particularly cattle. They are often thought to make it to the leaves of salad greens via runoff from livestock farms and contaminated water sources used for crop irrigation. The massive outbreak in 2018, for instance, was linked to manure from a high-density cattle farm found contaminating canal water upstream of contaminated lettuce fields.

Chicken Salad Chick is coming to Gwinnett County, opening its new store in Snellville next week with a ribbon-cutting ceremony Dec. 8.

The fast-casual chicken salad restaurant is located at 1918 Scenic Highway. The ribbon cutting will take place at 9:30 a.m. Dec. 8 and the store will officially open its doors at 10 a.m. There are 32 Chicken Salad Chick locations in Georgia, 15 in the metro area.

“Georgia is home to the highest number of Chicken Salad Chick locations in our footprint of 17 states,” Chicken Salad Chick President and CEO Scott Deviney said. “The Snellville location exemplifies our path to continued growth for company-owned locations in the metro-Atlanta area, and we anticipate additional announcements early next year. The Snellville restaurant is hosting friends and family events this Friday and Saturday that will benefit Southeast Gwinnett Cooperative Ministry’s food pantry. Hosting the Thanksgiving feast usually means a variety of leftovers tucked away in the refrigerator for building piled-high sandwiches. If you’re ambitious, you might even make soup or a casserole with the good and seasoned food. 

Here’s another tasty option that will please your family: Make a big, savory, crunchy, nutrient-packed turkey main-dish salad, and serve it at a weekend brunch with croissants and fresh fruit on the side. 

If you are like me and contribute dishes to the Thursday feast but don’t host the gathering, no worries about not having turkey leftovers. Just put a fresh turkey breast in the oven on Friday and roast it for this seasonal recipe. I look for a brined turkey breast at my local market in all-natural seasoned flavors like apple cider and fresh herbs. 

When I stir the salad together, I remember that my kids aren’t mayo lovers, so I compromise with half mayo, half Greek yogurt for the dressing. I use dried cranberries without added sugar. If the spirit moves, this recipe is also delicious with a crisp, chopped local apple added just before serving.

Enjoy it topped over mixed greens or spoon it between a halved croissant for a delectable sandwich.

Turkey Salad

  • 4 cups cubed, baked turkey
  • 1 tablespoon chopped red onion
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup mayonnaise
  • 1/2 cup Greek yogurt
  • 1 cup chopped celery
  • 1 1/2 cups seedless red or green grapes, halved
  • 1/2 cup dried cranberries
  • 1/2 cup roasted pecans, loosely chopped
  • 1/2 crisp apple, chopped (optional)
  • 1/2 fresh lemon

In a large bowl, combine turkey, onion, salt and pepper, mayonnaise and yogurt. Add and stir together celery, grapes, cranberries and pecans. Add apple, if you wish, and a few squeezes of lemon juice just before serving. Serves 8.

Yes, these are dessert latkes. No, don’t leave this site immediately! These are really good, I swear! Dessert latkes are a thing. Have you ever had a chocolate-covered potato chip? Salty and crunchy chips with the contrast of the sweet creamy chocolate. It just works, right? That’s basically what we have here. You can use russet potatoes, my favorite starchy spud for the ultimate crispy latke, but I went with sweet potatoes to enhance the dessert factor. And I added rainbow sprinkles because who doesn’t need rainbow sprinkles in their life right now?

Here’s my secret for crispy sweet potato latkes (though this works for any latke of your choice): potato starch. The reason russets make such great latkes is because they are starchy. Sweet potatoes are less starchy, so I added that back in with potato starch. The result? Latkes that are crispy outside and soft inside, which is exactly what we want.

Pro tip: Try a little potato starch on the outside of chicken next time you sauté it for an extra crisp factor. It won’t make it breaded, but it adds a slightly crispier coating. People will wonder how you did it!

Crispy Sweet Potato Dessert Latkes

Prep time: 20 minutes. Cook time: 15 minutes. Makes: 10-12 latkes.

Ingredients

  • For latkes:
  • 2 pounds sweet potatoes (to get 5 cups shredded)
  • 2 large eggs
  • 2 tablespoons potato starch
  • 1 teaspoon salt
  • ½ cup canola oil (or other oil for frying)
  • 2 tablespoons brown sugar
  • For chocolate ganache:
  • 4 ounces dark, milk or semisweet chocolate
  • ½ cup heavy cream
  • Rainbow sprinkles (optional)

Directions

  1. First, make the ganache. Break up the chocolate into small pieces and put in a medium heat-proof bowl. Heat the cream in a saucepan over medium heat just until it comes to a light simmer. Do not bring to a boil. Carefully pour the cream over the chocolate and wait 1-2 minutes to let the cream melt the chocolate before stirring until smooth.
  2. Now, latke time. Start by peeling your potatoes one at a time and shredding them with the large holes of a box grater, or using a food processor.
  3. Dry the potatoes very well with cheesecloth or a towel, squeezing out as much moisture as possible.
  4. Place them in a large bowl and add the eggs, potato starch and salt and mix to combine.
  5. Set up a cooling rack over paper towels.
  6. Heat up the canola oil in a large pan. Don’t use non-stick; cast iron or steel work great.
  7. Scoop heaping ¼ cup spoonfuls of the potato mixture into the pan and flatten slightly. They should sizzle when the oil is ready! Fry until golden brown, about 3 minutes per side. Do not overcrowd the pan.
  8. Drain on the rack and blot off any excess oil and then sprinkle with brown sugar.
  9. Drizzle ganache over one side of the latke. Decorate with rainbow sprinkles, chopped nuts or flaky sea salt—whatever you like!

DUBLIN — Potatoes are a staple food for the Irish, but many of their spuds come from Britain — and that supply chain is about to be smashed by Brexit.

The Irish Department of Agriculture warns that all British potatoes, including seed plants, will be banned from importation once transition arrangements end January 1.

Even in the event of a trade deal, the department has told growers, processors and distributors that the flow of British potatoes to Ireland will stop January 1 and not be restored for months, because Britain’s application to export potatoes “must go through the EU law-making process.”

Ireland’s food promotion agency, Bord Bia, says one in four Irish people visits their local “chipper” for this guilty-pleasure meal at least once a week.

Fast food chains are scrambling to find alternative sources for the 80,000 tons of British-made chips normally consumed in Ireland annually. Only about 10,000 tons of chip-grade potatoes are grown within Ireland.

“We’re looking to get as much homegrown stuff as we can but that might not be ready in time. We might have to go with smaller portions,” said Derek Duggan, manager of one of Ireland’s biggest and oldest fish-and-chip chains, Leo Burdocks, founded in 1913 when Ireland was still part of the U.K.

Most Irish-grown potato varieties are good for baking and mashing, but are too high in sugar content to deep-fry well. Such chips can turn out as stiff as cardboard because they don’t absorb oil effectively. High sugar content also can mean the chips turn dark in hue, not the desired golden brown.

Duggan said Irish-supplied potatoes used to make chips would taste differently and “won’t be as crisp, sadly … We might have to alter the salt and vinegar and what we do with the sauces."

Potato producers along England’s east coast grow chip-friendly varieties such as Maris Piper, but Ireland’s own potato crop is heavily dependent on imported seed potatoes from Britain. Scotland supplies around three-fifths of Irish needs.

Thomas McKeown, chairman of the Irish Farmers Association’s Potato Committee which represents 600 commercial farms, said Brexit might force Ireland to start producing more of its own spuds again.

“People are amazed when they hear we import so many potatoes from abroad,” McKeown said.

“Farmers are very good at doom and gloom, but there are opportunities here,” he said. “It might help restart the seed industry here and make the public more aware of where their seeds and potatoes come from."

How to Make Classic Sweet Potato Pie - Eater

I’ve never in my life made a pie before, but in the spirit of taking on a baking project during quarantine, I’ve decided I’m going to make my first-ever pie for the holidays this year. Can you recommend a recipe that’s reasonably foolproof but that gives good holiday vibes?

At the intersection of foolproof, low effort, and festive lives one perfect dessert: sweet potato pie. There is perhaps no simpler pie, and the payoff is tremendous, the sweet potatoes providing a rich custard-like texture that pumpkins just can’t deliver (even a mediocre sweet potato pie is, really, quite good). On the baking end, there are very few steps, and very little that can go wrong: Nearly all sweet potato pie recipes have you mix the filling in one bowl, before plopping it into the crust, and sliding the pie into the oven for the filling to set and the crust to brown. And when the process is done, and the pie is in the oven, you’ll have three or four dishes to wash, at most.

My first encounter with this dessert was not on a holiday table, but at the birthday party of a childhood friend. His mom made a sweet potato pie for all three of her sons’ birthdays, and after tasting her pie once, I made it my business to be at as many of these family celebrations as possible. I distinctly remember the warm, cozy smell of roasted sweet potatoes, buttery pie crust, and nutmeg lifting into the air and filling her kitchen.

This sweet potato pie recipe, from the archives of Saveur, is about as simple as it gets, with a filling that calls for only a handful of ingredients. The recipe notably lacks spices, so you can treat the recipe as a base for light improvisation, adding a quarter teaspoon each of your favorite fall flavors — think nutmeg, cinnamon, clove, and allspice. Or you can leave the recipe exactly as it is, planning to adapt it next year, when you’re a little more confident in your pie-making chops. For an absolutely no-fail version that’ll take even less time, you can use canned sweet potato, though I really recommend starting with baked or boiled sweet potatoes (plus, canned sweet potatoes are hard to find in many parts of the U.S.) Roasting or boiling the sweet potatoes yourself reinforces the feeling that you have played a meaningful role in the creation of this pie, even if the crust is store-bought and the “Pie Spice” came pre-mixed.

I’ve made sweet potato pie every holiday season for years now, but as a nervous baker who never gets more confident, I’ll be buying my pie crust this year. There are lots of good store bought options out there that’ll result in the buttery, golden-brown pie of your dreams. Or, if you’re deeply committed to making every inch of your first pie from scratch, you can roll up your sleeves, dust a rolling pin, and get to work. Either way, you should take pride in the fact that you made this pie (more or less) without a scratch of help, and that it’ll give even the best pumpkin pie a run for its money.

Promoting healthy eating habits, Food Safety and Standards Authority of India (FSSAI) took to social media to share a healthy and delicious salad recipe. Made with beetroot, paneer (cottage cheese) and carrots, the salad is loaded with nutrients derived from each of the ingredients.

Beetroot and carrot contain lutein, beta-carotene and alpha that are good for the heart. Together, they help improve digestion and relieve constipation. Paneer or cottage cheese, on the other hand, is rich in protein, and has a positive effect on muscle quality and metabolism, research has shown.

Try this beetroot and paneer salad recommended by FSSAI:

Ingredients for salad

4 medium – Beetroot
2 medium – Carrot
60 gm – Paneer
3 tbsp – Roasted peanuts
1 handful – Fresh coriander, roughly chopped
Lemon vinaigrette

For lemon vinaigrette

2 tbsp – Lemon juice
1 tbsp – Olive oil
2 – Garlic cloves, minced
½ tsp – Black pepper
Salt to taste

Method

Salad

*Boil the beetroot on medium heat for 35 mins or until it can be easily pierced through with a knife.
*The skin will peel off. After removing the skin of the beetroot, chop it into cubes and do the same with the paneer.
*Grate the carrots and keep ready in a bowl.
*Roughly chop the coriander.
*In a mixing bowl, combine beetroot, paneer, carrot, coriander and peanuts with lemon vinaigrette and serve.

Lemon vinaigrette

*Mix all the ingredients in a bowl and whisk slightly.

Tip: Refrigerate the salad for a couple of minutes before serving.

To begin with this easy winter salad, wash the veggies in lukewarm water with a dash of salt, drain the excess water and pat dry the veggies. To make this salad, take one radish and one carrot, cut them into thin strips after washing under cold water.

In the meantime, take a pan over medium flame and add some water and add diced turnip. Boil the turnip and then drain the water and keep it aside.

Next, peel a beetroot and coat it with a dash of olive oil, salt and pepper, roast it or bake it. Once the beetroot is nicely roasted, cut them into small pieces and transfer the pieces into the salad bowl.

To make the salad more satiating, heat a pan and roast the quinoa till it turns slightly brown in colour.

To the large salad bowl, add in the radish, carrots, turnip, roasted beetroot along with the slightly roasted quinoa, give it all a nice mix.

Then prepare the salad dressing by mixing, 1 tablespoon olive oil, 1 tablespoon lemon juice, a dash of black pepper, salt and 1 teaspoon honey, 1 teaspoon mustard sauce, whisk it all together and pour it over the salad. It's Time You Learned How To Make Your Own Potato Chips - UPROXX

Learning how to make your own potato chips sounds like a daunting task. It’s not, but that’s part of the appeal. Everyone thinks it takes tremendous effort. First, there’s the matter of slicing potatoes paper-thin without losing a finger. Then there’s the whole frying-in-boiling-oil aspect. Make these from scratch without sustaining significant injuries and you’re a legend.

With a whole new wave of lockdowns starting, now is as good a time as any to master making chips. The only specialty kitchen tool you need is a mandolin, which you can get easily for around $20. Besides that, you need a heavy-bottomed pot or wok to fry in, or a deep fryer, if you have one. The rest is pretty low-impact, albeit a little time-consuming.

In the scheme of “foods you can make at home which are insanely cheap to just go out and buy,” chips are actually way easier than making your own fries. And the rewards are equally high — especially when you create distinct flavors via spices. Follow our recipe once and you’ll have this snack in your permanent repertoire to trot out any time you want to impress folks.

What you’ll need in the kitchen:

  • Mandolin
  • Wok or heavy-bottom pot for frying
  • Thermometer
  • Two baking sheets (or plates or cutting boards)
  • One large bowl
  • Kitchen towels (or paper towels)
  • Cooling rack (or paper towels)
  • Skimmer spoon (or spider)

Step 1: Prep The Potatoes

  • Two Queen Anne potatoes
  • 4 cups of tap water
  • 1 cup of white vinegar

I’m using Queen Anne’s because that’s what I have in the kitchen at the moment. You can also use Yukon Golds. You want a potato that’s both not too starchy and not too waxy. That being said, if you want to experiment, have at it!

The first step is to wash your potatoes. I washed three but I ended up using only two.

Next, I added the cold water and vinegar to a large bowl. The vinegar is a key ingredient at this step. It helps to draw the starches out which then helps the chip get nice and crispy when it fries.

If you want to make salt and vinegar chips, use a 1:1 ratio of water to vinegar. Then you’ll just need to add salt once the chips are cooked.

I like to halve my potatoes. It just makes for easier slicing on the mandolin. They’re easier to handle and generally come out a little more even the whole way through.

I place my mandolin on its thinnest setting, balance it over the bowl, and start slicing. It takes less than a minute to slice through two potatoes.

I then place the bowl in the fridge for about 2-ish hours. I’ve let them rest for an hour before and they were fine. Some recipes say they should rest overnight but I’ve never had the patience for that.

After about two hours, I fetch the bowl from the fridge. I set up a kitchen towel-lined baking tray and layer the raw chips as close to a single layer as possible. I then use another towel to press down on the wet chips to draw out as much of the water as I can. You can do all of this with paper towels, by the way. You don’t have to get all the water out, just as much as you can without mushing the raw chips.

Step 2: Fry The Potato Chips

Ingredients:

  • 1.5 liters/50-oz. Neutral Oil
  • Salt

Method:

I get my wok on the flame and pour in the bottle of oil. I’m using sunflower oil but you can use peanut or canola, too.

Once the oil has reached 350f/175c, we’re ready to fry.

I gently drop the raw chips into the oil using the skimmer spoon about 15 to 20 at a time. You want to make a full layer but avoid complete overlap.

I use the skimmer to keep the potato chips moving around the oil. Industrial potato chip friers use metal paddles for this. The point is to keep them moving so they don’t stick or burn. There’s a very narrow window from them being done to crisp to burnt, so you need to stay focused.

The sweet spot for removing the chips from the oil is then the edges just start to brown. Remove the chips to a wire rack for cooling and oil leeching. Hit them with salt immediately. If you want, you can go wild here with flavor. Our editor uses a mix of mustard powder, onion powder, and black pepper. Paprika always works well, too.

Once seasoned, the chips will continue to brown on the rack until they’re golden. I end up making three batches — taking around 15 minutes in total.

Step 3: Serve

Once cooled, I transferred the chips to a basket for munching. Truth be told, I was snacking on these chips the whole time I was frying them too. They were freaking delicious. Imagine a chip that’s thinner than a Kettle Chip but with more heft than your average industrial Lay’s.

It’s just the right amount of chip and it nails that perfect balance of crunch and salt. Full disclosure, I ate the whole basket for my lunch. I regret nothing.
