To begin with this easy winter salad, wash the veggies in lukewarm water with a dash of salt, drain the excess water and pat dry the veggies. To make this salad, take one radish and one carrot, cut them into thin strips after washing under cold water.
In the meantime, take a pan over medium flame and add some water and add diced turnip. Boil the turnip and then drain the water and keep it aside.
Next, peel a beetroot and coat it with a dash of olive oil, salt and pepper, roast it or bake it. Once the beetroot is nicely roasted, cut them into small pieces and transfer the pieces into the salad bowl.
To make the salad more satiating, heat a pan and roast the quinoa till it turns slightly brown in colour.
To the large salad bowl, add in the radish, carrots, turnip, roasted beetroot along with the slightly roasted quinoa, give it all a nice mix.
Then prepare the salad dressing by mixing, 1 tablespoon olive oil, 1 tablespoon lemon juice, a dash of black pepper, salt and 1 teaspoon honey, 1 teaspoon mustard sauce, whisk it all together and pour it over the salad. Then top the salad with 1 chopped guava and 1 chopped orange. Give the salad a nice toss and lastly add some fresh coriander leaves and walnuts. Enjoy!
