Pear Salad | Food & Recipes from the Farm | lancasterfarming.com - Lancaster Farming

Ingredients

  • 8 ounces cream cheese
  • 15-ounce can sliced pears
  • 1 small (3 ounces) box lime Jell-O
  • 8 ounces whipped dairy topping
  • Maraschino cherries (optional)

Directions

Soften cream cheese. Drain pears, reserving juice. Bring 1 cup of pear juice (add a little water if needed to equal 1 cup) to a boil. Stir in Jell-O until dissolved; set aside. Mash pears with potato masher.

Beat cream cheese until smooth. Gradually add Jell-O mixture, beating until Jell-O is completely incorporated into the cream cheese. Stir in mashed pears. Cool.

Fold in whipped dairy topping until everything is blended. Chill until firm. Decorate with Maraschino cherries if desired.

This Jell-O salad has been on my grandmother’s Christmas menu for as long as I can remember. I look forward to it each year. Now my family often requests that I make it for them on special occasions.

Sometimes I substitute other types of fruit and Jell-O or add marshmallows. It makes a beautiful salad for Easter dinner if you fold in pastel-colored miniature marshmallows when adding the whipped dairy topping. Strawberries and strawberry Jell-O are yummy in the summertime. For Thanksgiving dinner I use mandarin oranges and orange Jell-O. Also, I usually double the recipe because my family likes it so much.

Nathan and I are thankful that we can enjoy farm life with our four children. Working together as a family provides lots of time to be together.
